One of my favorite sauces in the world is rose sauce. It blends the best of two worlds and really brings out the flavor of any pasta. This particular rose pasta sauce comes together easily and is delicious with cheese filled tortellini. To round out the meal serve with a Caesar salad and garlic bread sticks. This recipe makes 2-3 servings.

  • 1 roasted red pepper chicken sausage, sliced
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • ½ C green bell pepper, diced
  • ½ roasted red bell pepper, diced
  • 2 T butter
  • 2 T olive oil
  • ½ C flour
  • 1 C sun-dried tomatoes, diced
  • 1 C whole milk
  • 1 C white wine
  • 1 8 oz can tomato sauce
  • ½ C grated Parmesan, plus more for topping
  • 1 t dried oregano
  • ¼ t dried thyme
  • ½ t dried basil
  • 1 t red pepper flakes
  • 8 oz pasta of your choice
  • salt and pepper to taste

For the Pasta Water:

  • 3 T olive oil
  • ½ t dried oregano
  • ½ t dried thyme
  • ½ t dried basil

Step One

Heat butter and olive oil over medium.

Step Two

Add sausage, onion, and green bell pepper and sauté for 2 minutes.

Step Three

Add garlic and roasted red bell pepper and sauté for 3 minutes.

Step Four

Add flour stirring constantly to form a paste.

Step Five

Add wine, tomato sauce, milk, and sun-dried tomatoes, bring to a boil and reduce to a simmer.

Step Six

Meanwhile, bring pasta water with the oil, oregano, thyme, and basil to a boil and boil pasta according to package instructions.

Step Seven

Add oregano, thyme, basil, Parmesan, and red pepper flakes to the sauce and simmer for 5 minutes.

Step Eight

Toss the pasta and the sauce together, sprinkle with Parmesan and serve.
