Tilapia is one of the most diverse fish options available for the home chef. It is a clean fish that doesn’t have the seafood taste of many other varieties. Tilapia is also very easy to grill, maintaining its firmness as it cooks. This recipe brings out the natural juices and balances it with the sour of the lime juice and flavorful earthiness of tequila.

  • 2 # tilapia fillets
  • 1 C lime juice
  • 1/4 C tequila
  • 1/2 t cracked black pepper

Step One

Marinate the tilapia in lime juice, tequila and fresh cracked pepper for at least an hour.

Step Two

Grill fish until fish flakes easily with a fork and has an internal temperature of 165 degrees.

Serve immediately topped with pineapple salsa and with cilantro lime rice.
